My Pinterest Test Kitchen. Still going strong.

It’s not that I haven’t been perusing Pinterest lately.

It’s not that I have been ignoring its many virtues.

In fact, I still loves me some Pinterest and I still treat it as my personal cookbook primarily.

I haven’t forgotten about my Pinterest Test Kitchen.  I forgive you if you have.

It’s actually a little more like this – I’ve made a concentrated effort to carry my phone less. Which means I am less likely to take a picture of the food attempts I am creating.

So let this post sufficewith or without accompanying photographs.

Here is a recipe on which you should not waste your time –

Italian One Pot Wonder.

It was no one pot wonder friends. It was more like a wonder why I thought this would taste good. Or a wonder how I can pretend to eat this so the kids will finish their bowls. It was pretty bad.  No.  It was really bad.

These granola bars, on the other hand, we’re quite the success.  Easy to make. Tasty. Not too sticky. Satisfying. The recipe suggested freezing them for future lunches, which was my original intention, but the entire batch was consumed before the freezer could even be a valid thought.

I have a faithful granola bar recipe, but this one is a smidge different and a touch faster and really truly yummy.

This Mediterranean wrap is an old favorite – proven through literal years of summer eating. Light. Delicious. Easy to prep ahead of time. A guaranteed success.  Don’t let the fancy ethnic name throw you.  It’s super kid and family friendly.

These cookies? Good for a quick cookie need. Nothing to rave about, but a kid-satisfying quick treat. Pleasant, tastier than store bought and super efficient, time-wise.

Then there’s these hand pies. I think I was intrigued by the name. Hand pies. I mean,  come on. A hand pie. They look intimidating.  At least, to me they did. Crusts always look a tad intimidating to me.  But these were truly easy. And kind of fun. They tasted a little extra coconutty, due to my coconut oil. I have friends who promise that refined coconut oil does not carry the same heavy coconut taste. I don’t know. I buy mine at Trader Joe’s and I haven’t experimented with any other variety yet.  These were still delish despite the extra flavoring. I am anxious to try them again – this time with fresh strawberries, ’tis the season, and perhaps with a different oil to avoid the coconut flavoring.  (I’m not a hardcore coconut fan.  You know, because it tastes like deodorant and all.)

I have a handful more that I have been stumbling through here and there – I told you Pinterest recipes and I were still co-horts. I’ll save a few. More for a later day.  And maybe I’ll remember to snap a few pictures then too.

    This is the ‘real’ one pot Italian wonder that lots of bad variations have come from-http://www.marthastewart.com/978784/one-pan-pasta It is truly delicious and my go to when I have grape tomatoes getting wrinkly and needing to be used. It is a great quick lunch. Don’t skip the red pepper flakes because it does need a but of a kick. As soon as the Martha recipe come out in the magazine there were tons of knock offs on Pinterest and I agree that they are pretty bad having tried some myself.
