Sunday Crock Pot Meals

I like a crock pot.

She’s a genius.

We’re kind of good buddies.

Like me and Thrift Store and me and Colin Meloy.

Almost every Sunday we employ Crock Pot’s clever magic.

When we return from our weekly church-attending, grocery-shopping morning we enter our home and a meal awaits us.

And although no one in our family minds eating the same meals over and over except me, I would love to garner some new tried and true recipes for Crock Pot to perform.

So here’s what I thought I’d do.

I’ll share some of our favorite Crock Pot Creations and you guys share some of your favorite recipes in the comments.  Pretty please.

Our List —–

Quinoa Chicken Chili.  This is a frequent request – and shamefully easy.

Chicken Fajitas.  An easy meal.  I use Trader Joe’s Taco Seasoning Mix instead of whatever type this recipe calls for.  You could just as easily toss in your own spices and flavorings that you prefer.

White Chicken Chili. I love this one.  Man, I really love brothy soups.

Pasta Fagiole.  Hands down, everyone’s favorite at our house. Requested every single week.  I usually puree tomatoes instead of using canned and I frequently use chicken broth in place of beef broth and my choice of pasta varies according to what we have or can find.  And it still always tastes fabulous.

Chicken Philly Sandwiches.  Simple – very few ingredients.

Chicken Noodle Soup.  We made this whilst camping this fall.  It was incredibly easy and really delicious.

Chicken Taco Chili.  So many of these recipes are very similar – but this one is just enough different to list it separately and it’s so good.

I can see here as I make this list that our meals for Lady Crock Pot are almost exclusively of the chicken and/or soup/chili variety.  I certainly do toss a pot roast in every now and again or an entire chicken, but I seem to gravitate towards soups and chicken offerings.  I’d love some variety in this list – particularly in the beef department.  We have a wonderful farmer connection for fresh and local beef that I’d like to be able to better employ on Sundays.

      I make my own cream of… soups now – they aren’t hard but they do a little extra work on a morning when I want crock pot convenience!

    Any chicken pieces you like cooked on high all morning. Drain and add BBQ sauce and let cook while you finish the meal. Prep potato or pasta salad the day before.

    Flour cube steak and brown in a little olive oil. layer in the crock with sliced onions and salt and pepper. Add water half way up and cook on high while you are gone to church. In another crockpot place cubed peeled potatoes and just cover with water. Cook on high while gone. Drain and mash adding butter and milk. In a third crockpot place green beans and seasonings. Everything is ready to eat when you get home. I did three crock pots a lot when the kids were growing up!

    Rub a 3-4 pound pork roast with 2 pkg or equal homemade taco seasoning. Add 3/4 cup water to the bottom of the crock. Cook until falling apart and shred the meat and stir it back into the juices in the crock. You can start this late the night before and do it on low for 12 or more hours depending on your crockpot. Serve the meat over rice. You can plug your rice cooker into a timer and set it to come on. The next day use the leftover meat for pork tacos. This is one of our favorite meals.

    Italian Beef – 1 large beef roast, 1 jar hot banana pepper slices, 1 pouch dry Italian dressing mix – we like the zesty version, 1 cup beef broth. combine in large crock pot and cook on low for 8 hours – serve on chewy rolls with the broth on the side for dipping – any leftovers reheat really well.

    tortellini soup – 2 cans Italian style diced tomatoes, 1 small bag fresh spinach, 4 cups chicken broth, 1 bag frozen tortellini, 8 ounces cream cheese – diced up. combine in crock pot, cook on low for 4 hours – serve with a crusty loaf to sop up the broth – easy peasy
